And when you zoom through the lens a little closer into all the baking action happening in Mumbai, two things come to the fore—an ambitious arrival of convivial, master bakers and pastry chefs in many neighbourhoods of the city and a resurging interest in gourmands, for bread and desserts that go beyond the ordinary boundaries.  

Handcrafted layers of dough, desserts glazed with faultless precision, flavours inspired from the world around and baking techniques that complete the circle of perfection. All this combined with the chefs’ singular vision to make the city a flourishing land of fresh and fabulous bakes, a host of winsome bakeries and patisseries in Mumbai are making us fall in love with the decadence of desserts and fluffy bakes all over again. The pandemic served its role in elevating the status of bread and patisseries, too, a time that witnessed a genius troupe of home chefs and bakers whip some super-delicious recipes at home and setting off food trends like focaccia bread art, banana bread, rainbow bread, pull me up cakes and more! Love Crummbs by The Lovefools, Mumbai

Lots of love, a lingering aroma of fresh bakes and a passion that never gets boring—Love Crummbs is about a story born out of a story. What does that mean? In 2015, when chef Sarita Pereira returned to her city roots all the way from her training with the Michelin-rated restaurant Can Jubany in Barcelona, she was eager to create and continue her culinary magic, bringing a flavour-focussed, community-style restaurant The Lovefools to Mumbai. This was in more ways than one, fine-dining reimagined. Housed in a heritage bungalow in one of the bylanes of Bandra, the menu at The Lovefools is popular for its 8-course meals as well as the elaborate breakfast and brunch options. When we thought this is as global and versatile it could get, chef Sarita was joined by her new co-founder Ankit Sawant, who returned with a dough-ble graduation from the Academy of Pastry Arts Malaysia and quality experience from the US. Just a little more than a month ago, the two dropped Love Crummbs to retell their love for bakes and pastries that are fascinating to look at and tuck into. The patisserie sits in the premises of The Lovefools and presents the chefs’ whimsical takes on bakes from around the world.  

Must-haves: The inverted croissants at Love Crummbs by The Lovefools are not your regular croissants and are rounded off with just the right kind of crispy goodness. Also ask for their Namelaka Danish and Brunost brioche to get your bake-tastic party started!

Ether Atelier, Mumbai

‘Expecting the unexpected’ fits perfectly in the mould that Ether Atelier has sculpted for itself since its inception in 2018. An artisanal brand that tackles an exciting mix of complex and subtle dessert compositions, Ether by chef Prateek Bakhtiani is art that you can relish one dessert at a time. The young chef who comes from a chemical research background before he studied pastry at Le Cordon Bleu, Paris, made Mumbai his central home for Ether Atelier where every creation drips with a story of triumphing experiments. The interesting thing is that there is never a dull moment at Ether—the brand takes its moments of creative exploration seriously, turning its trials into season-led collections that are launched bi-annually, with ingredients that are exotic, exquisite and intriguing. 

Must-haves: Let’s talk cakes first. At Ether Atelier, you must try Sakura, a glazed Peruvian chocolate and raspberry cake that mimicks the visuals of Japanese pink blossoms. While Smoked Black Forest looks exactly like Christmas turned into a cake topped generously with sour red cherries.

TwentySeven Bakehouse, Mumbai

Rest assured, when the creative minds Aditya and Aditi Dugar behind the progressive, modern-Indian restaurant Masque set out on a new retail rendezvous—the result is a newfangled love story of fresh, dough-scented bakery called TwentySeven Bakehouse in Mumbai. The kitchen also helmed by chef Rachelle Andrade who comes with some sweet and solid experience from Mag St. Bread Co and Theobroma, the newly opened TwentySeven Bakehouse works as a cloud kitchen, offering its baked goodness via deliveries and pickup. What makes it a bakery extraordinaire is that it leaps cultures and countries around the world to curate scrumptious bakes, and no two bakes are the same! Take for instance, Zaatar and cream cheese croissant and Israeli Florentines inspired from the Levant regions, while the flavours of Alfajores, soft butter cookies sandwiched with dulce de leche, come all the way from South America.  

Must-haves: For an all-rounding bake marathon, plunge right into the menu and call for TwentySeven Bakehouse’s signature croissant cube that is presented in a new flavour every month, some classic ham and cheese croissant, hearty palmiers, moist carrot cake with cream cheese frosting and the generously coated hazelnut PAC (or pain au chocolate).

Sassy Teaspoon, Mumbai

With her dessert-loving patrons at the core, Rachel Goenka has been building a flavourful ground for her brainchild, Sassy Teaspoon, for a decade now. A bridge between bakeries and patisseries in Mumbai, the offerings at this brand that has presence not just at various outlets in Mumbai but also in Pune, are all things sassy (as the name rightly suggests), colourful and curiously tempting. As we like to put it—at Sassy Teaspoon, there’s something for everyone, from cakes, cupcakes and brownies to tarts and cookies. With her early years spent in Dubai, restaurateur, chef and author of a recipe book, Rachel pursued culinary arts at Ballymaloe Cookery School in Ireland, and earned a diploma in patisserie from Cordon Bleu, London. Mumbai being her next stop, the irresistible world of desserts came to life at The Sassy Spoon in 2012.

Cou Cou, Mumbai

Think decadent desserts. And then think glamour. Both the elements combined translate to Cou Cou, a chic French patisserie in Mumbai’s pulsing heart of Jio World Drive in BKC, where some of the finest gourmet brands exist. A first-of-its-kind offshoot of The Oberoi Group, Cou Cou is all French and esthétique in its techniques and visuals but Indian at heart, with its choice of unique ingredients. The patisserie and viennoiserie is helmed by chefs Pratik Deshmukh and Pierre Storti, who run the buzzing kitchen with diverse offerings that range from fresh bakes, naturally fermented sourdough bread, artistic pastries and croissant sandwiches to interesting cocktails and wines on the menu. The fun part about Cou Cou is that it does not wrap around the regular coffee shop ambience, rather appears as a luxurious but community-friendly pitstop to devour some delicious bakes, where a lot of the orders are crafted and decorated live at the counter. A treat for eyes and tastebuds! 

Must-haves: Give your tastebuds a kick of sweet and savoury by biting into their fruity and creamy Fig & Vanilla Pastry, Jelly-cious Ispahan wearing many shades of pink and the pie-perfect lamb pithiviers.

Toshin, Mumbai

There’s a quiet charm that runs seamlessly in the identity of Toshin, a Mumbai-based patisserie founded by Toshin Shetty. All that comes out of the dessert pantry here speaks of handcrafted artistry that is as beautifully enjoyed in visuals as in its taste. Shetty comes from a family of restaurateurs and was had his toes dipped in the world of culinary since childhood. The only ingredient needed was an endless passion for creating recipes that are no less than extraordinary, and that he had in abundance. After graduating from IHM Aurangabad and studying at Le Cordon Bleu, London, Shetty breathed a fascinating life to his sweet vision of a patisserie, which now lays out a whole array of macarons, cookies artisanal ice creams, sorbets and cakes. 

Must-haves: Revel in the subtle but punchy flavours of passion fruit sorbet by Toshin, some coffee pralines and the unmatched range of celebration cakes that are too good to be true!

Facts be told, once you familiarise your tastebuds with all the baked goodness Mag St. Bread Co has to offer, then there’s no going back. The bakery house from the popular Magazine Street Kitchen is run by the power duo and founders of Mumbai’s fine-dine The Table, Gauri Devidayal and Jay Yousuf. The singular but shared love to give the city an unlimited batch of fresh bakes, Mag St. Bread Co is where the doughs rise to the occasion, bringing a trove of viennoiseries, baguettes, sourdough, bagels, Pullman loaves and even gourmet cheese—all under one roof. Not only can these fresh, aromatic creations be home delivered, but they can also be picked up from The Table or Mag St. Café retail counter. 

Must-haves: Cruffin with vanilla custard, double chocolate croissant, smoked salmon and goat cheese quiche and their oh-so-versatile choices of bread if you like to put your sourdough and baguettes to work to make appetisers and open sandwich recipes at home!
